Hi All
Short question... during updates when a new Kernel gets installed, how do I remove the older kernel and references to it in GRUB?

You can esily do so through synaptic - search for linux-image you will see those that are installed. Right click on those you wish to remove and menu list will be updated during the process.

I always keep at least 2 - if I get a problem with new ones then I can still boot the previous.
