I just got UBUNTU put on my computer by my IT department at work and want to download the Itunes application on it for my IPOD. Does anyone know how I can do this since I do not have windows?

go to system, admin, synaptic package manager and install rhythm box

music player and organizer for GNOME
Rhythmbox is a very easy to use music playing and management program
which supports a wide range of audio formats (including mp3 and ogg).
Originally inspired by Apple's iTunes, the current version also supports
Internet Radio, iPod integration and generic portable audio player
support, Audio CD burning, Audio CD playback, music sharing, and
Podcasts.

I assume that you want to purchase new songs from time to time, right?

Which I'm afraid won't work with other software, so please install (ask for) VirtualBox (note: no CoverFlow support in iTunes) or VMWare Player/Workstation which offers CoverFlow support (the latter also support multiple CPU cores to speed up things).
