I've got this guide from pendrivelinux.com (http://www.pendrivelinux.com/2008/10/15/ubuntu-810-persistent-flash-drive-install-from-live-cd/) I can't see any reason why I couldn't use Xubuntu with this and save myself some overhead, is that right?

While I haven't tried this personally and therefore can't guarantee anything, I don't see any reason you can't, because it looks like everything you're doing in that operation is done via command line, which can be found on every distro and every desktop environment or window manager I've ever seen and used. Someone correct me if I'm wrong on this, but I don't see why you can't do this with Xubuntu at all.

Gah! I'm an idiot, didn't spot this one in the sidebar

Using the provided usb creator (http://http://www.pendrivelinux.com/2008/11/06/usb-xubuntu-810-install-via-the-usb-creator/)
