How can I list what packages I have installed (as opposed to those installed as dependencies), and if possible, in chronological order of installation?

Synaptic history will tell you what you need to know, you can copy and paste it into the writer of your choice.

I also go to settings-preferences in synaptic and click on the show package properties in main window, so that I can get dependencies etc. I am not sure why this isn't automatically on already it is helpful to me, but I'm not a true geek.

Latest aptitude logs are in /var/log/aptitude. Previous actions are stored in Gzip files.
