There really isn't any way to make itunes work. I think Codeweavers may have an older version but you have to pay for it.

As per another player their are a lot of god ones to try. Banshee is very popular, Quod Libet is another that is very good. Amarok is coming out with version 2 which is supposed to be real nice (http://lifehacker.com/399160/an-early-look-at-amarok-2). Songbird is another one that a lot of people like. Personally, I keep it simple and use xmms.

Players usually come down to personal preference so you will probably get better answers if you also post what features you are looking for in a player.

    Enjoy

    Banshee my favorite.
If you want an interface really similar to iTunes, try Rhythmbox. (Installed by default)

You can get iTunes running on ubuntu with wine.

Works for me. I'm running Heron.

Download the installation file from apple.
    From the terminal
    wine iTunesSetup.exe

This will guide you through the setup normally.

When it's run, go to where iTunes.exe lives in the .wine directory.
    ~/.wine/drive_c/Program Files/iTunes

    Then:
    wine iTunes.exe

    It works for me.

Caveat - I've done this as a curiousity. I haven't actually loaded any songs into it.
I'm thinking of trying to actually get my iphone to work with it sometime.
At the moment I believe that this is not possible. I don't know of anyone having done it. But it would be an awesome hack.
I think that it would involve getting wine to run the iphone's USB drivers.
Anyone care to comment on the possibility of this? Or am I smoking crack?

    +1 To Banshee.

Depending on your iPod it will work with most of them.

    Version 1.2 has an equalizer.

And yes you can get postcasts to download automatically.

Banshee and Rhythmbox are great alternatives and as well as gtkPod. I've never been able to get iTunes to work with Wine, but I've heard that some people can actually get iTunes to work with Wine, I just don't know if it's fully functional.
