Which session is best depends on what you're trying to do and on your personal preference. Try them and see.

Gnome is the default for Ubuntu. If you decide to install KDE, there will be an option for KDE in the menu. I sometimes use IceWM, for which there's an option (assuming icewm is installed). The Failsafe Gnome option is for when you mess up your Gnome config. The Failsafe Terminal is for when you want a minimal environment, or you want to precisely control your environment for testing purposes, or when you've seriously messed certain things up.
Really, the best way to understand this is just to experiment. You won't hurt anything.
