Re: XP/Vista lost after booting to Ubuntu CD
I'm a little confused here... your title seems to suggest that you've lost your Windows stuff, but the text seems to say that it's only the dual-head stuff that's not working post Ubuntu-ing.
I'm going to assume that it's the latter*, (if it's the former then I apologise).
Right, I've got a Dell (Latitude) in a dual head configuration with XP Pro, and I've got to say that something upsets the dual-screen configuration about once or twice a month. So I've just put it down to "one of those Windows things".
You say that the rebooting the monitor just gives a yellow/amber light - this is usually monitor-speak for "I can't find a signal - so I'm on powersave".
What to do next? I'd go into XP/Vista and try setting up your dual-head configuration again (Right-click desktop and then use Display->Properties->Settings?) Actually, maybe try setting up a single-head (different to the normal one) first, then try the dual-head.
Last thing - again assuming that Vista/XP is still viable - I can't think off-hand of something that Ubuntu would do that would change just the Display setting. If something does go badly wrong then - in my experience - it's more likely to totally hose your Windows install than do such a clever selective edit.

(* just had parting thoughts - if the problem is that there's no display at all in Windows, what about trying to booting into XP Safe Mode? Or - like laptops - is there a key combo available that lets you switch displays ... just a thought)
I find that one of: "Use Linux", "Just reboot", "Hit it hard" and "No" are usually satisfactory answers for most computer-related questions
