Well...I was lurking in the hopes that someone else would respond with some sage-like advice but since that hasn't happened I'll just tell you to check out iTalc and please let me know how it goes for you. Edubuntu also has a built in Thin Client Manager but you have to install something to be able to see the student computers. There's lots of stuff on the Ubuntu Wiki about how to do that although I haven't done it yet myself. If you are in the small community of teachers using Ubuntu in a school lab environment you might consider checking out my blog and Stephen Walder's blog (referenced on my blog a few weeks ago) for additional info. Stephen in particular is highly knowledgeable about Ubuntu inner workings and might have some useful things for you.

Yes, Windows software, I'm sure that will be very useful...
I'd use Netvizor. You can view whats going on on each computer on your screen and even close certain programs that people are running. Meant for offices but would probably be perfect to schools as well. Theres some more information about it here:

Well in our our company we use TimeDoctor software to monitor the employee's internet activity of his/her PC through capturing screenshots and the websites they have visited and send it to the employer's email add. Maybe this could help you out in your school for it has the same approach.
I think NetOps school is the best for monitoring school lab. Did anyone use this ?
