Ubuntu --> Applications --> Add/remove --> search for "CVS"
there you'll find several cvs clients with gui-frontend for gnome and kde...

I have used different GUI cvs clients on Linux and I'll say that CrossVC is the best client i have seen and used. Do have a look at it as well.
I run Cervisia, even though I don't use KDE but GNOME. It has all the features I need and is very stable.
sudo apt-get install cvs
worked for me.
