Thank you everyone for all of the help! Now I can be on my way to becoming a Linux expert (I wish it was easy) and I think I will use online tutorials and such then start screwing stuff up on my own.
Best way is dive in and learn as you go. Decide on something you don't know how to do, but want to know, and learn how. Install a flavour you like then start experimenting!
Might be an idea to clone your Ubuntu partition once you've installed and have it running sweetly. Then when/if you break things ireparably, you can clone the working system back to the partition as it was. There's a learning experience/curve.
