We could give you more helpful suggestions if you told us what you're looking for. What is it about the default GUI you don't like? Do you need something lighter/faster? Do you want something that looks/feels more like Windows?
Depending on how you do it, you could install just the Desktop Environment, or you could bring in the default applications, which will probably be functional duplicates of applications you already have. Your motives for changing should dictate your approach.
Because Desktop Environments are installed as metapackages, their installation isn't very easily reversible. (Different componenets have to be removed individually.)
