Looking for Quicktime X and Quicktime 7 Pro alternatives

As a long-time Mac OS X user I have found it hard to live without the borderless Quicktime X for watching videos and the advanced live pitch-shifting and time-stretching capabilities of Quicktime Pro 7 for learning how to play songs on guitar. Can anyone recommend any Ubuntu/linux alternatives to these great features?

Wouldn't VLC do a lot of that?

If "tiime-stretching" means slowing the playback down, it does. "Pitch-shifting", you'd have to look.
If used in Unity VLC is not borderless but there certainly isn't a lot of controls in the way.
