A person I email daily, who has Windows, tells me that my emails come into her in "unicode" and she has to switch it to html to read it.

For Thunderbird version 24:-
Go to address book
Right click the contact name
Select properties
On the contact tab, there is a field "prefers to receive messages formatted as" with a drop down selection box.
Edit > Preferences > compostion > send options.
Look at what it's set at.
