Right click any video> properties> open with. (Should be similar in xubuntu)

Ignore the gear thing.

The only thing in the settings is Preferred Applications which is very limited and doesn't let set any video players.

I used : Right click any video> properties> open with. (Should be similar in xubuntu)

Once I set one video, will all videos us VLC?

That's what normally happens. When you click the set as default button.
