So I see the slogan kind of often, but what does it mean? I don't know much about what GNU is, only that the GNU project's goal was to give computer users 'freedom'. But what exactly does the slogan mean?

It is just a play on words. Gnu can be pronounced "new", so a "new" generation, as opposed to the "old" generation of windows (or Mac or whatever).

Hi physman2.
The slogan:
It's a playful phrase based on the pronunciation of the word GNU, which could be (wrongly) pronounce as:Linux: the choice of a GNU generation.
There's a very entertaining movie about the history of Linux, the GNU project and the roles of Richard Stallman, and Linus Torvalds. It is called "Revolution OS". I believe these days it is available on youtube.Linux: the choice of a NEW generation.
Regards.
BTW, RMS suggests Gnu be pronounced (in english) with a hard g. I read some article where someone was going to Africa to hear how the natives really pronounce the name for this animal.
Loosely speaking, this can be seen as an allusion to this classic commercial.Linux: the choice of a NEW generation.

It's a play on words from the old Pepsi slogan, "The choice of a new generation".
I try to treat the cause, not the symptom. I avoid the terminal in instructions, unless it's easier or necessary. My instructions will work within the Ubuntu system, instead of breaking or subverting it. Those are the three guarantees to the helpee.
