What do you mean by "vanilla"?
The LibreOffice package in the repo installs exactly the same LibreOffice as you would get from libreoffice.org. Installing it from the repo ensures that you will get updates as they are available and it will be installed in a manner consistent with other software on Ubuntu.
Canonical doesn't do anything to the application itself.

Depending on which version of Ubuntu you're running, the repositories may or may not be the latest stable version. I like the LibreOffice 4.0.x and 12.04 repositories had LibreOffice 3.6.x. I added LibreOffice' ppa using this guide:

No surprises. The only caveat I'm aware of is if upgrading an Ubuntu install to a more recent version, it's wise to disable any ppa s (and proprietary drivers).
