Stripping Down Ubuntu Touch for HTC Desire

With the help of this forum I managed to install ubuntu touch onto my HTC Desire. The thing is it's quite laggy (to be expected) and contains a lot of apps that I will never use (also to be expected). My theory is that if I can remove some of the apps the phone will become less laggy. How do I go about doing this?

Unless the apps are running all the time, which I doubt, removing them is only going to free up storage space. How do you think this is going to make Ubuntu any faster?

Apps do seem to be constantly running once you have started them. There is no way to close an app on ubuntu touch that I have found. I'm also not sure if the apps are cached in the RAM while not in use.
