OS: PC-BSD 'cause it looks really nice.
Software: GIMP, MyPaint, Inkscape, Pinta, Synfig, and LibreOffice.

I think my favorite open source OS would be ReactOS, because it's based on Windows NT, and is thus compatible with Windows applications. For applications, probably GIMP.

If by "Non Linux Open Source Projects" you mean Linux stuff that will also run on non-Linux systems, then I'd include OpenOffice (yes, I still use it), Gimp, Firefox, Thunderbird, zim-wiki, and a few others that I can't quite remember because it's a while since I booted Windows.

My favourite windows-only OS project would be VirtuaWin. It lets me have the multiple desktops I've got so used to in Linux.

Also, a number of J2ME apps that I can run on my Nokia symbianV3 phones (don't laugh). E.g. a port of KeePassX, Anyremote so I can use my phone to control Impress on my other computers, a timer for speeches and Putty for Symbian, which I think is a .sis file.

SMPlayer has a nice Windows implementation. I use it on both platforms. It includes a Windows build of mplayer as well with the option of using mplayer2 instead.

I mean more like open source firmwares and stuff than applications. For example http://www.rockbox.org/ which is much better than the OF in a bunch of mp3 players.
Whoever came up with the phrase "There is no such thing as a stupid question" obviously never had the internet.
