I honestly enjoy Ubuntu. I think it has tremendous potential. It just needs to stop presuming a user's want of participation in these things. Options are a way of life for me (and, undoubtedly, others). The more options and features, the richer the user's experience. Wondering what people's thoughts are.
I think you should give Fedora 18 with Gnome 3 a try
Add Adobe Flash Player and Fluendo mp3 codec pack, both free downloads, and you have a nice system that is not to far off from your Unity experience. With One exception, Fedora does not data mine you.
