Probably the monitor doing the usual "no active signal change, so I will go into sleep mode" since there is no activity registered via a keyboard/mouse. I wouldn't think it is anything other than that and it should be safe to boot the device without a keyboard/mouse/monitor, as long as you are still able to ssh or otherwise (ftp, webmin) get into the server upon a full reboot.

It loses network access for some reason.

I have a few myself that are a little funny about having "no" K/M/M at all connected when booting, and "must" at least be hooked to a KVM to boot, then operate correctly, also with all errors and power turned "off" in the BIOS. Of course not all BIOS will strictly adhere to its programming, of course.

During the initial install I've got the keyboard & monitor while I test everything out, and that way I know it's working right. It's also how I'm verifying if it's a network issue or system when I can't connect.

When I'm happy with the box, I'll be moving it to another location in the house where it's can be less disturbed and just chug along in peace.

Ok, then I won't worry about that then.

It's stayed up now for at least 24 hours now, and appears to be running without issues.
