I think Its not possible to run iTunes on Ubuntu. But you can try helper program like WINE to install it OR you can Install iTunes on a Virtual Box (Windows Installed) Machine.

you cant install itunes on linux [you may be able to get it to run in wine, or in a vm]
you would be better using something that can sync with your ipod that is native to linux.
have you tried pluging your ipod in to your machine and seeing what opens automatically ?
