I'm not an authority on this - but I can tell you I have not been able to find a working solution.
Part of it depends on the version of exchange you are accessing - some versions apparently have mapi clients that do work.
But there isn't an activesync client for linux that I know of. If anyone else does know of one, please correct me.

I've been trying to get exchange 2007 working for a week with MAPI. This is what I've found:
Our exchange (most are like this) does only allow MAPI from the internal network, from the outside you must use Exchange over HTTP (OWA).
So inside MAPI for Evolution works, but from the outside I can't get any mails, unless on VPN.
The OWA 2000/2003 plugin does not work against the exchange server.
DavMail + Thunderbird works both inside and outside. But calender is slow. So I use the Thunderbird+Lightning plugin for Exchange 2007/2010.
I've have yet to figure out a method for getting notes loaded.
All in all I find this the biggest obstacle in Linux for the Desktop. Proper email client (Evolution has an ancient interface) with full Exchange MAPI/OWA support. Also I have to say that Evolution crashes all over the place.
I've tested also OpenSuse and Fedora and had basicly the same issues with Exchange. Ubuntu does have the best Exchange support of the Linux community, even though its poor.
