I'm currently using Unity 0.2.46 on Ubuntu 10.10. Installed from a ppa. The only way I have found to add an application launcher to the panel is to actually launch the app, then right click it's icon on the panel and click "Keep in Launcher"
This is great but I've noticed at least one of my applications (Mumble) doesn't give me that option. Is there an alternative method? (see screenshot for example)

Used this way in 11.04 to add custom wine apps to dock:
right click your desktop
select Create Launcher...
create the custom Launcher as you want to.
Now you got the launcher on the Desktop. If you are satisfied with it, get it in the Launcher Panel:
Open your Home Folder. Press Ctrl + H to show hidden files if necessary.
Browse to
~/.local/share/applications
Drag and drop your Launcher from Desktop to that folder.
Now drag and drop your launcher from .local/share/applications to the Launcher Bar on the left on your Screen.

choose icon when creating launcher, if you change icon after that launcher still will use old one.
