I haven't really found a good post that informs an individual on how to install EVE Online under Ubuntu, so I figured I would post my own how-to. Just about everything works perfect, except the fact that I do not have sound and if I alt-tab out, EVE freezes. Here it goes...

1. Download the EVE Online Client (using a fresh copy of EVE offline installer as of 03/19/2011)

2. Install WINE. (Using version 1.2.2-0ubuntu2-maverick2)
2a. Open a Terminal and type "sudo apt-get install wine".
2b. Don't add the quotes of course. Accept the license at your own will.

Becaues the EULA requires Arial, you will need to do the following:
3. Download the Arial True Type Font.
3a. Source: http://www.4shared.com/get/h6VD3TRz/arial.html
3b. Copy or move the arial.ttf file to the WINE folder.
3ba. Navigate to your home folder.
3bb. Click EDIT, then PREFERENCES. Check "Show hidden and backup files". Close the window.
3bc. Go to .wine/drive_c/windows/Fonts and put the font file in there.
3bd. Close the explorer. Undo the changed in step 3bb if you like.

4. Open your download directory and edit install EVE under WINE.
4a. Permissions Tab: Check the box next to "Allow executing file as a program". Click close once complete.
4b. Right-click the installer and "Open with Wine...".

--The installer should begin to run. Follow the steps and use common sense when installing.

Once the install is complete, run it. Works for me with the nVidia proprietary drivers.
