Ubuntu Server usage/temperatures display and drive encryption

Can someone please point me in the direction of some sort of real time output for memory usage, processes etc. and temperatures in command line server.

Also Im considering replacing my current primary drive. But I mounted 2 drives for all my storage. How do I check to see if they're encrypted? How do I disable it if they are? I want keep everything on them. Its only the system drive I will be replacing.

There is no manual for sensors or any sensors at all.
