kubuntu comes with KDE 4 as the default graphical environment while ubuntu comes with gnome as default
Try not to get it right the first time , if you do no one will see the effort
just moved to Kubuntu, to check out my gnome shell free options...and I like it. Its new (for me anyways, last time I saw KDE was Mandriva 2005), different, some things I like, some I don't .....but no shell. I do like Alt-Tab switcher, and the left upper corner Expose view.

There are many kinds of Ubuntu to choose from. Ubuntu is the main distribution with Gnome graphical user interface. KDE as used in Kubuntu looks a little more like Windows. Xubuntu is the lightweight member of the family.
There are lots of less-known Ubuntu distributions (in short: Distros) :

You can try each of them as a live CD, if you want to take a look before you decide.

Which one has less steep learning curve?
So far, I like the gnome, so probably will stick with it.

You can see demos on Youtube.
I don't know about the learning curve since I have only used Ubuntu, but I doubt there is any major difference.

Welcome to the forums. Thread moved to recurring discussions, you can find all kinds of gnome vs kde vs xfce threads here.
You can find additional information with a simple google search and visiting the various home pages as well =)
There are two mistakes one can make along the road to truth...not going all the way, and not starting.
