you may need to tell it that the .img file is a hard disk rather than a CD image.

If all you want to do is to try the interface, you can go and install ubuntu-netbook-remix via apt on any Jaunty install, maybe you should go with the alternate-cd.
Since you will be running it in a vm you certainly don't need drivers for netbook specific devices, so this may well be the easiest and most trouble less way to get it up and running.
So there is really no point installing it with kernel modules and drivers for devices your vm won't have.
I did basically the same thing outside a vm to install UNR on a old laptop of mine.
impretty sure i installed easypeasy just like i would any other os onto a virtual machine. perhaps you should just read a normal guide for installing ubuntu in virtualbox and then install the netbook-remix package?
