I am trying to get gtkpod to work with my iPod but get the message “Could not find command 'xmms' specified for “Play Now”
Can anyone help me with this command please (I haven't a clue to what it wants)

I think it wants you to choose an audio player, but to use the default, try "totem %s." For enqueue try "totem --enqueue %s"
