Yes, I have tried using sudo update-grub, but to no avail. =( Although this replaces my /boot/grub/menu.lst with a new one, the kernel list at reboot is still unchanged, with the old UUID and all.
Inputting this into the terminal:

ls -l /dev/disk/by-uuid
gives me just about the exact same output that you have, with the exception of the UUIDs, of course, and ../..sda1 and ../..sda2 .
I do not have root.disk or swap.disk listed in this output.
In the root directory of my first partition (Windows XP Home), boot.ini contains the following line at the end:

c:\wubildr.mbr="Ubuntu"
This allows me to choose between XP and Ubuntu at a boot menu. Selecting Ubuntu then gives me the option to press ESC to enter the list of kernels, which I must then edit with the correct UUID or /dev/sda2 in order to boot into Ubuntu.
My /etc/fstab file contains the following:
