I'm using Eclipse daily at work to develop Java software. I've also used NetBeans 6.5.
Both are very good IDEs for Java, and both have support for other languages, including C and C++. I don't know if they support C# - I don't think so. On Ubuntu, you'd better try MonoDevelop if you're going to use C#.
NetBeans 6.5 currently provides more out-of-the-box than Eclipse.
Download both Eclipse and NetBeans from their websites instead of using the versions from the Ubuntu repository - the versions in the repository are old.
