The post you reference was made in March 2008 but TBH I haven't heard that this is now in the main Wine packages - and being an iPhone user, I'm always looking for better ways to sync my music. I may be wrong but I believe that the only way to sync with iTunes when using Linux is by running an XP instance in Virtualbox.
With version 1.x of iPhone (and Touch) firmware, you could sync natively using Amarok and libgpod but the encryption was changed in firmware 2.x (thanks a bunch Apple ) and this no longer works.
Hrm, is it possible to downgrade it to 1.x? I could do that, then just jailbreak it to get apps, I guess....
EDIT: Oh, I forgot to say. Thanks for your help.
I don't have the same iPod functionality, but Rythmbox works fine for manually syncing, and it allows me to track chenges in the preferences, so it effectively doesn't take long to manually sync.
And I'm not sure how well iTunes works under Wine , but the manual sync via Rythmbox updted my entire library last night (new iPod) of only 250 songs, but the entire copy to my iPod took well under 2 minutes. Songs scream back and forth, which is truly more end user friendly than Windohs iTunes...

Songbird is an excellent option with plugin for iPod. It supports editing tags and sync with iPod. Give it a try.
