Actually, I think I like the last ones, with the original Ubuntu colours and the word Ireland attached. I'd like to suggest two changes, if I may. First, the green, white and orange layers are just a small bit too far apart, could the white and orange be brought closer to the green? It's a little hard to read, particularly where the letters overlap. The other change is a nit-pick on the shades of green and orange, although this mightn't work so well. The official flag colours are Pantone 347 (green) and 151 (orange), which apparently corresponds to #00f723 and #ff850d. The orange is similar, but the Green is much brighter and "greener"
I'm not sure how good the green would look, though. |

I made some changes: white and orange brought closer to the green; official flag colours + different green
