10.04 is sure ok. But nothing prevent to test something more up to date, and revert back to 10.04 if needed.

Undoubtly FlightGear (aircraft) and Torcs (car). X-Plane (aircraft) if you are willing to pay for the simulator.

FlightGear on opensource side is very good.

X-Plane is better but you will have to pay for it, the demo is too much restrictive.

FlightGear native Linux is covered by Ubuntu repositories, i recommend this over wine, especially if the wine release is buggy.
