I agree as for things I do not like in default Ubuntu are many, however, I do not use default Ubuntu. What I do use is not enough of "mine" to say I am not using Ubuntu if you follow me.
I like the 2 panels or a top panel and dock. KDE I find to be my favorite DE along with icewm.
I find xfce to look really nice but xubuntu is slow, a base xfce4 install is great.
You should try Debian or a custom Ubuntu minimal install if it feels slow to you. Even on a fast computer.
