aha, interesting indeed! So you can get nouveau to work, except with a display manager like gdm...

Could you tro booting with the following kernel argument:

video=nvidiafb:off
and make sure nouveau is the driver in xorg.conf

This is why I recommend Debian.

I would turn off KMS (kernel mode setting) and use the nv driver...

You don't have a "Monitor" Section, while it is mentioned in the "Screen" Section...
