You would need whatever packages related to what you wanted your server to do: i.e. Apache, MySQL, PHP, etc. but yes you could just install the desktop version of Ubuntu and retrieve the packages...
You stated you wanted to install ubuntu in lieu of Arch Linux. So I'm assuming ultimately you are going to be doing an Ubuntu installation on this PC.

This is easy to do, just need to do the partitioning, however, backtrack shows up in GRUB as ubuntu, so it might get a little confusing.

sudo bash...
pwd stands for print working directory, it should tell you where you are currently in your filesystem, so for example if you downloaded the file to /home/username/Downloads
