What I would suggest it to go to guayadeque.org forums and make that request. There is where the developer will know about it. I personally think that'd be very cool
The closest thing is in Preferences to tick Play Random Track When Playlist is Empty. You still have to click Play but it will start playing from whatever Allow filter you have set up.
That shoudn't happen with guayadeque. You can report your problem at http://guayadeque.org/forums/index.php and you are sure to get help.

I don't think you needed sudo mount... that gave root the ownership of the mounted image. Just mount the iso without sudo and install. If you can't unmount the image now try
gksu nautilus

From the console try
sudo apt-get install ubuntu-desktop
this may re-installed the missing packages

If you want to play the whole album just double-click in the album, not need to select songs. Whether guayadeque plays on click or adds to playlist is something you can change in preferences
