One thing that helped me get my EasyCAP to work was to add bars=0 to the driver arguments.

I had trouble getting my EasyCAP to work in Linux, until I discovered that I need to add bars=0 to the driver arguments. See more here:...
The key is to pass the param "bars=0" to the easycap kernel module; this seems to work for me:
modprobe easycap 'bars=0'
