    Thats an issue with the built in drivers, do a gksudo nvidia-xconfig, this will then create the xconfig file, then do a gksudo nvidia-settings and select your rez and save to X.

    Thats because you are used to the mac, if you push the wheel button in Ubuntu, you don't have to do enter or ctrl+v, it would automatically paste.

    You don't have to remove empathy to use Pidgin, they can exist side by side and not cause any issues. I would recommend leaving Empathy as removing it might remove the metapackage ubuntu-desktop
