After installing them, you then select them from the cog icon near where you type in your password when logging in. :)
I have just reported that as a bug. If you have a Launchpad account (if you use Ubuntu One, it's the same as that), you can click up the top that it affects you too....

I assume that you are using Gnome Shell, not Unity. If you're using Unity, there will be one extra step, in italics. Ignore the italics if you are using Gnome Shell.

Now, when you hover over an extension, it shows a tooltip saying that it's not compatible with my version of gnome shell.

I think 18 months is a long time in linux time, especially the last 18 months. Using something from that long ago isn't for me.
I mean I hope/assume they're going to arrange them in subcategories based on features and have "most popular", "most recent". :)
