You can create a symbolic link...

ln -s ~/path/to/thing shortcutName

Then you cd into shortcutName you will be in ~/path/to/thing

Maybe try to rename the folder that holds the encrypted files to something like Docs-Encrypted and see if you can import it then.

You should be able to use putty within windows and ssh into a linux box with X Forwarding enabled.

TrueCrypt is the best way to go -- all you have to do is check for updates once every three months. But if you don't want to use it you could give encfs a try.
