Go, with Ubuntu full time. A friend of mine was having a similar situation and I suggest one of the Ubuntu "derivates" (LinuxMint) and he loves it;moreover, he is using his ipod with no problems...
on my part Jaunty perfomance better than 8.1, even recognized my wireless card with no problem.
Keep with ext3. I did install ext4 and I did not notice any difference in speed. Besides it makes my machine a bit slower that with ext3. I don't think is quite ready yet.
