Simple in the end. Don't use the nvidia settings program, it obvously has no idea how Xserver works ;)
Use the gnome tool (System>Preferences>Monitors) and everything worked properly...

Do you know the make/model?
You wouldnt fix an IP in rc.local, for that you need /etc/network/interfaces.

Everything works fine apart from on reboot the display always defaults back to 800x600.

you could add it into the /etc/rc.local file, before the exit command

Not a solution, but rhythmbox does have a -d switch for debugging.
