Try adding "Darwin" to the force-downgrade-for line in rygel.conf.
This might be doable with rygel's gst-launch plugin. I'll try to come up with a launchline for it and get back to you

Please try a different UPnP client on your phone like TwoPlayer or BubbleUPnP. UPnPlay is a) horrible and b) doesn't really like Rygel and this is is not fixable from our side since it doesn't...
Sorry, the preferences tool is kind of a mess currently. It applies to MediaExport only.
Transcoding to your phone might work with 0.16.3 where the DLNA AVC profile is supported.
Those two are horribly broken in 0.14 (the version on 12.04). And, as others already said, the configuration to modify is ~/.config/rygel.conf

If you have _lots_ of videos, the meta-data extraction slows down for some reason I couldn't pinpoint yet; Restarting rygel every odd-hundred videos helps.
SSDP Is hard to handle; there is no connection tracking module for it. The best thing you can do is to configure Rygel to a fixed port, allow TCP access to that and UDP access to/from port 1900.
