When using rsync or scp to cp a file from my laptop running eoan to my server running bionic, my dns breaks; what I mean is, I cannot copy *any* files from my laptop to my server without all domain...

If she has access to another computer, she could burn a livecd to usb and see if that works; that, at least, would identify if it's an install issue...
Getting a bootable usb for Mac can be a pita because of what Macs need on it... even using OSX I was never able to get one working, but there are some great tutorials out there to help out.

I've had issues with UEFI in the past, but not recently. You can login though, right; you just need to hit "Enter" to get the prompt?
