I would recommend you to use some cloning tool such as clonezilla or similar. Parted magic boot live cd has some tools for cloning, if you are little bit familiar with these softwares.

you have a bad rep video card... did you tried installing drivers for your video card? maybe that will help...

that's it buddy, you're stuck with that res and you can't get it better than that because ur using live cd...
get a supergrub cd, is about 4mb, burn it boot it and try to automatically fix your boot linux / windows problem, easy to follow... as for other methods you'll have to more experienced linux user...

i would advice you to reinstall i.e repair win xp first and then reinstall grub, by leaving ubuntu installation intact. you can both do fine and there are loads of instruction available throughout...
