After rummaging in Synaptic, I would suggest this:
sudo aptitude purge evolution evolution-common evolution-couchdb evolution-exchange evolution-indicator evolution-plugins...
This is what I don't like about Ubuntu. No software like an email client should be part of the system. We should be able to remove it completely without any collateral damages.
