I've got the exact same behavior as you. Random freezes, which when caught in time i can go to TTY1, logon, ran top, find nothing wrong, go back to X session to find it unfrozen and apport saying...
I had a similar problem when the focus animation was set to "fade". Once I set it through ccsm -> animations -> focus to none this kind of flickering stopped.
Everything looks ok on what you posted and w_scan finds the transponders. It just can't get the services.
Have you tried using kaffeine to tune the channels?
Could you post the output of w_scan and any relevant parts of dmesg (look for dvb, dib0700, and dvb-usb lines), "lsusb -vv" and "lsmod | grep dvb"

In order to change the themes in Gnome 3 you need to install the gnome-shell-extensions-user-theme package and then enable it in the tweak tool.
You then can download/install/use gnome3 themes.
in gconf-editor go to apps-> metacity -> general and set the button_layout to something like "menu:minimize,maximize,close"
