if you go to the view menu you'll see some different view modes. There should be one that does the same as "list" does in windows :)
I think in any case you should try to install ubuntu and set it up. The part that could be most tricky is to use ntfs for shares (sometimes causes problems)

As far as i know Gnome-Do is a pretty unique rip-off from quicksilver ( a mac app) And i don't think there is any substitute. I myself have problems with Gnome-Do being unwilling to start sometimes....
In most cases the package named ubuntu-restricted-extras should do the trick for you :)
it has flash, java and non-free fonts.
You should be able to burn the ubuntu iso with either k3b (kubuntu/kde) or Brasero (ubuntu/gnome) which is the default of ubuntu. It should be very easy to spot how to burn it.
