Ah good, I did search on the Ubuntu packages list using the packages site, but it only listed 2.12.0 so I guess that hasn't been updated yet?...

Managed to solve it by re installing the default themes and rebooting, weird.

More info: All java games and apps work fine with Oracle Java, so it seems OpenJDK is just broken on Ubuntu 16.04 with the ATK wrapper.
